In a large skillet heat oil and butter, add veal chops and brown slightly on both sides turning frequently. Saute for about 5 minutes. Remove veal chops from skillet and add onions and mushrooms. Cook until onions become soft and then return veal to skillet and stir well. Add garlic, sage, wine and tomatoes. Stir and cook over medium heat for 20 minutes and if the sauce is reducing add the chicken broth. Place veal chops on a platter and pour the sauce over the top. Serve with vegetables and pasta.
